Having trouble finding a low FODMAP mayonnaise? Try this homemade aioli instead. Quick and easy, you can have fresh mayonnaise in under 5 minutes.
- 1 egg
- 1 cup olive oil (light flavoured)
- 3 tbsp lemon juice or vinegar
Place the egg in the bottom of a medium-sized container (I use a mason jar). Add all other ingredients and let them sit until the egg settles at the bottom of the jar (about 30 seconds). Place an emersion blender on the bottom of the container and blend for 20 seconds without lifting the blades from the bottom of the container. Done!
