Ingredients

  • 2 common tomatoes (seeded and diced)
  • 1/4 cup green onions (green parts only – diced)
  • 1 tbsp parsley (minced)
  • 2 tbsp fresh lemon juice
  • 1 tbsp olive oil
  • salt & pepper to taste

Instructions

  1. Place all ingredients in an airtight container. Shake well and refrigerate for at least 2 hours before serving. Keeps for 2 days.
