Description

This quick and easy low FODMAP slow cooker stuffing is the perfect sidekick for any holiday dinner!


Ingredients

  • 1/4 cup unsalted butter
  • 1 cup leeks – green part only, chopped
  • 1 cup carrots, peeled + chopped
  • 1 cup oyster mushrooms, chopped
  • 1/2 cup celery, diced
  • 1/4 cup fresh thyme leaves
  • 1/4 tsp freshly ground pepper
  • 1 loaf day-old low FODMAP sourdough bread, cubed
  • 1 cup bacon, cooked + roughly chopped
  • 1+3/4 cups low FODMAP chicken broth
  • 1/4 cup dry white wine

Instructions

  1. Melt the butter in a large frying pan and add the leeks, carrots, mushrooms, and celery and cook them until they’re tender (about 5 minutes). Once the vegetables are cooked, remove the pan from the burner and stir in the thyme and pepper. 
  2. Pop the bread crumbs and bacon in a 6-quart slow cooker. Add the vegetables along with the chicken broth and wine. Give it a gentle stir until the bread cubes are evenly moist. Cook on low for 3.5 – 4 hours.
