Looking for the perfect afternoon sidekick? These easy low FODMAP pumpkin cookies will be your favourite sweet treat in no time!


Ingredients

  • 2 + 1/2 cups low FODMAP all-purpose flour
  • 1 + 1/2 tsp pumpkin spice
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup unsalted butter, melted
  • 2 eggs
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 tsp pure vanilla extract
  • 1 + 1/2 cups low FODMAP chocolate chips

Instructions

  1. Preheat your oven to 350 degrees and line a baking sheet with parchment paper.
  2. Combine your flour, pumpkin spice, baking soda, baking powder, and salt in a medium-sized bowl.
  3. In a separate bowl, mix gogether the butter, eggs, granulated sugar, brown sugar, and vanilla extract.
  4. Add the dry ingredients to the wet ingredients and mix until they’re fully combined, then stir in the chocolate chips.
  5. Drop the cookie dough onto your prepared baking sheet about 2″ apart. Bake for 16 – 18 minutes, or until the cookies are a light, golden colour. Let the cookies cool on a wire rack.
