Low FODMAP Creamy Polenta

Description

Looking for a simple side dish you can whip up in a flash? This creamy polenta will keep your taste buds and your tummy happy!


Ingredients

Scale
  • 5 cups water
  • 1 cup yellow cornmeal
  • 1 tsp salt
  • 2 tbsp unsalted butter
  • 3 tbsp parmesan cheese, shredded

Instructions

  1. Place your water in a large saucepan and bring to a low boil. Slowly whisk in cornmeal and continue to stir until bubbles on the surface of the polenta start to pop. Then lower the heat and continue to cook, stirring frequently, until the polenta becomes thick and starts to pull away from the side of the pot (about 5o minutes).
  2. Once the polenta is cooked, add the salt, butter, and parmesan. Stir until they’re fully incorporated. Serve immediately.
