What You Need
  • 2 cups low FODMAP all-purpose flour
  • 2 tsp baking powder
  • 0.5 tsp salt
  • 0.75 cup sugar
  • 0.5 cup chocolate chips
  • 1 egg
  • 1 cup milk
  • 0.25 cup vegetable oil
What You Do
  1. Preheat your oven to 400 degrees. Line each well of your muffin tray with liners and set aside.

  2. Place your flour, baking powder, salt, sugar, and chocolate chips in a large bowl and whisk to combine.

  3. In a small bowl, gently whisk your egg. Add the milk and vegetable oil and whisk a second time.

  4. Make a well in your dry ingredients. Pour the wet ingredients into the well and whisk quickly with a fork until the batter is just moistened.

  5. Place 1/4 cup of batter in each well and bake for 20-23 minutes (or until a toothpick inserted in the center of a muffin comes out clean). Cool on a wire rack.
